Ingredients

For the cake:

  • 1 cup all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar, divided
  • ⅓ cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×13-inch baking dish.
  2. In a small bowl, whisk flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat egg yolks with ¾ cup sugar until thick and pale. Stir in milk and vanilla.
  4. Gently fold in flour mixture.
  5. In a separate bowl, beat egg whites until soft peaks form. Gradually add remaining ¼ cup sugar and beat until stiff.
  6. Fold egg whites into the batter. Pour into prepared dish and bake for 25–30 minutes.
  7. While cake bakes, whisk together milk soak ingredients in a bowl.
  8. Once cake cools slightly, poke all over with a fork. Slowly pour the milk mixture over the cake. Let absorb for at least 3 hours or overnight.
  9. Beat whipping cream and powdered sugar until stiff. Spread over cake.
  10. Add a layer of sliced strawberries. Drizzle with extra purée if desired.
