- ⅓ cup powdered sugar
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- 1 egg yolk
- 1–2 tablespoons cold water

- 4 egg yolks
- ¼ cup cornstarch
- 1 tablespoon unsalted butter
- 1½ teaspoons vanilla extract

- ¼ cup apricot jam + 1 tablespoon water (for glaze)
Instructions
- Make the crust: In a food processor, pulse together flour, sugar, and salt. Add butter and pulse until the mixture resembles coarse crumbs. Add egg yolk and water, pulsing until dough just comes together.
- Shape into a disc, wrap in plastic, and chill for at least 30 minutes.
