The Recipe – Fantastic Fruit Tart

Ingredients

For the tart crust:

  • 1¼ cups all-purpose flour
  • ⅓ cup powdered sugar
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 1–2 tablespoons cold water

For the pastry cream:

  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 egg yolks
  • ¼ cup cornstarch
  • 1 tablespoon unsalted butter
  • 1½ teaspoons vanilla extract

For the topping:

  • 2–3 cups sliced fresh fruit (berries, kiwi, peaches, etc.)
  • ¼ cup apricot jam + 1 tablespoon water (for glaze)

Instructions

  1. Make the crust: In a food processor, pulse together flour, sugar, and salt. Add butter and pulse until the mixture resembles coarse crumbs. Add egg yolk and water, pulsing until dough just comes together.
  2. Shape into a disc, wrap in plastic, and chill for at least 30 minutes.
  3. Roll chilled dough into a circle and press into a 9-inch tart pan with removable bottom. Prick with a fork and freeze for 15 minutes.
  4. Preheat oven to 375°F. Line the tart shell with parchment and fill with pie weights. Bake for 15 minutes. Remove weights and bake 10 more minutes until golden. Cool completely.
  5. Make the pastry cream: In a saucepan, heat milk until steaming. In a bowl, whisk together sugar, egg yolks, and cornstarch. Slowly pour hot milk into the egg mixture, whisking constantly. Return everything to the pan and cook over medium heat, whisking until thick.
  6. Remove from heat, stir in butter and vanilla, and pour into a bowl. Cover with plastic wrap directly on the surface and chill until cold.
  7. Assemble the tart: Spread chilled pastry cream into cooled tart shell. Arrange fruit on top in overlapping circles or patterns.
  8. Heat jam and water together, then brush gently over fruit for a glossy finish. Chill until ready to serve.
