Ingredients
For the cake:
- 2½ cups all-purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1¾ cups granulated sugar

- 1 cup whole milk
- ½ cup sour cream
For the frosting:
- 1 cup unsalted butter, softened
- 3½ cups powdered sugar
- ¾ cup unsweetened cocoa powder

- 4–5 tablespoons heavy cream or milk
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each. Stir in the vanilla.
- Mix the milk and sour cream in a separate bowl.
- Add the dry ingredients to the butter mixture in three parts, alternating with the milk mixture. Begin and end with the dry ingredients. Mix just until combined.
- Divide the batter evenly between the pans. Bake for 25–30 minutes, or until a toothpick comes out clean. Cool in the pans for 10 minutes, then turn out onto racks to cool completely.
- To make the frosting, beat butter until creamy. Sift in powdered sugar and cocoa powder, then add salt, vanilla, and cream. Beat until fluffy and spreadable.
- Once cakes are cool, frost between the layers and over the top and sides. Decorate with rainbow sprinkles.
